Romesco Sandwich

Ingredients  

  • 1 Ciabatta
  • 2 tbsp SOS Romesco
  • 1 tbsp Mayonnaise
  • 1 Chicken breast fillet
  • 1 Egg 
  • 2 Onion slices
  • 3 Tomato slices
  • 2 Lettuce leaves
  • 3 Bacon strips
  • 2 tbsp Olive oil
  • 2 tbsp Bread crumbs

Method

  1. Season the chicken breast fillet with salt and pepper
  2. Beat the egg
  3. Dip the chicken in the egg
  4. Drop it in the bread crumbs and coat well
  5. Heat a pan and add olive oil
  6. Shallow fry the chicken for 4 to 5 minutes on each side
  7. Take it off the pan and let it rest
  8. Meanwhile in the same pan fry the bacon strips 
  9. Cut the ciabatta horizontally through the middle
  10. Assemble the sandwich by spreading the Romesco, mayonnaise, then layer the lettuce, onion, tomato, chicken and bacon
  11. Cut through the middle
  12. Serve warm

Tips

You can air fry the chicken and the bacon. Do brush the chicken with olive oil before air frying
