Romesco Sandwich

Crispy bacon, juicy chicken, and a smoky-sweet Romesco spread come together in this hearty Focaccia Sandwich. Packed with bold Spanish flavours and a hint of spice, it’s the ultimate café-style bite you can make right at home.

Ingredients  

  • 5 inch Focaccia 
  • 2 tbsp SOS Romesco
  • 1 tbsp Mayonnaise
  • 1 Chicken skinless boneless thigh fillet
  • 4 Tomato slices
  • 2 Lettuce leaves
  • 4 Bacon strips
  • 25g Parmesan cheese
  • 1 tbsp Olive oil

Method

  1. Spread 1 tsp of the Romesco sauce on each side of the chicken thigh
  2. Heat an oven to 180*C, oil a baking tray and bake the chicken thigh for 20 min or until done and grill for another 5 minutes to get a nice char  
  3. Slice the focaccia and top up with the grated parmesan and grill for 5 minutes or till the cheese melts 
  4. Meanwhile cook the bacon in a pan till golden brown
  5. Chop the lettuce and mix with mayo and lemon juice
  6. Remove the bread from the oven 
  7. Spread the 1/2 tsp of Romesco on each half
  8. Layer one half of the focaccia with the lettuce mix, chicken, tomatoes and bacon 
  9. Close the sandwich with the other half
  10. Serve warm

Tips

You can air fry the chicken and the bacon. Do brush the chicken with olive oil before air frying
