Romesco Sandwich
Crispy bacon, juicy chicken, and a smoky-sweet Romesco spread come together in this hearty Focaccia Sandwich. Packed with bold Spanish flavours and a hint of spice, it’s the ultimate café-style bite you can make right at home.

Ingredients
- 5 inch Focaccia
- 2 tbsp SOS Romesco
- 1 tbsp Mayonnaise
- 1 Chicken skinless boneless thigh fillet
- 4 Tomato slices
- 2 Lettuce leaves
- 4 Bacon strips
- 25g Parmesan cheese
- 1 tbsp Olive oil
Method
- Spread 1 tsp of the Romesco sauce on each side of the chicken thigh
- Heat an oven to 180*C, oil a baking tray and bake the chicken thigh for 20 min or until done and grill for another 5 minutes to get a nice char
- Slice the focaccia and top up with the grated parmesan and grill for 5 minutes or till the cheese melts
- Meanwhile cook the bacon in a pan till golden brown
- Chop the lettuce and mix with mayo and lemon juice
- Remove the bread from the oven
- Spread the 1/2 tsp of Romesco on each half
- Layer one half of the focaccia with the lettuce mix, chicken, tomatoes and bacon
- Close the sandwich with the other half
- Serve warm
Tips
You can air fry the chicken and the bacon. Do brush the chicken with olive oil before air frying
