Grilled Cabbage with Romesco

Ingredients  

  • 1/2 Cabbage
  • 6 tbsp SOS Romesco
  • 8 tbsp of Ricotta cheese
  • 1 tbsp Lemon juice
  • 1 tsp Salt
  • 2 tbsp Olive oil
  • 1/2 tsp of Red chilli powder

Method

  1. Add the Romesco, ricotta, 1/2 tsp of salt, lemon juice to a blender and blend till you get a smooth consistency
  2. Cut the cabbage into 4 quarters
  3. Brush the cabbage quarters with a mix of 1 tbsp of olive oil, 1/2 tsp of salt, the chilli powder
  4. Heat a grill pan and brush it with 1 tbsp of olive oil
  5. Place cabbage quarters and let them sizzle on high on each side for 2 to 3 minutes. This will give them a nice char on each side
  6. Meanwhile spread the romesco mix on a plate
  7. Remove the cabbage from the pan and place on the sauce base
  8. Serve hot

Tips

No grill pan? No problem! You can easily make the cabbage quarters in the oven or on a normal pan. Simply prepare the cabbage as directed, then preheat your oven to 400°F (200°C). Arrange the quarters on a parchment-lined baking sheet and roast for 30-35 minutes, flipping halfway through, until they’re tender with crispy, charred edges.
