Ingredients
- 2 Sea Bass Fillets with skin
- 3 tbsp SOS Romesco
- 2 tbsp Olive oil
- 2 tbsp Creme fraiche
- 1 bunch Broccolini - approx 160g
- 2 Garlic cloves
Method
- Pat dry the fish fillets and sprinkle a pinch on the flesh side
- Heat a pan and add in the olive oil
- Once hot gently add in the fish, skin side down. It should sizzle
- Let it be on the skin side for atleast 2 to 3 mins or till it turn crisp and brown
- Flip the fillets to the flesh side and let them cook for another 2 to 3 mins or until the fish is cooked. Remove and keep aside
- Meanwhile in a bowl mix the SOS Romesco, creme fraiche, lemon juice and a pinch of salt. Mix it well
- Boil some water in a bowl and drop in the broccolini. Halve the stalks if too thick. Blanch for 2 mins. Remove and drop in cold water to stop the cooking
- Heat the same pan as the fish, add the grated garlic cloves and stir fry the broccolini for 2 to 3 mins
- Plate everything - Spread the sauce mix on a plate, lay the fish on it and then the broccolini
Tips
Drizzle some chilli oil if you want more spice. This recipe works well with salmon or cod too.
