Aussie Pie
Theres no more food iconic in Australia than a meat pie! Try replacing the beef with chicken like this recipe. Its as tasty. We added our SOS Romesco to give it a spicy twist and took the beloved comfort food to the next level. This rich, smoky, and slightly spicy sauce adds an irresistible depth of flavor to the traditional meat filling, making every bite unforgettable.

Ingredients
- 500g Chicken mince
- 1/2 Cup Water + 4 tbsp Water
- 4 Garlic cloves
- 1 Onion
- 2 Carrots
- 1 Cornflour
- 4 tbsp SOS Romesco
- 2 Egg yolks
- 3 Sheets of Shortcrust pastry
- 2 Sheets of Puff pastry

Method
- Heat a pan, add the olive oil and saute the minced garlic
- Add chopped onions, carrots and the chicken mince and stir fry a few minutes
- Now add the Romesco and 1/2 cup water, cover and let cook
- Mix the cornflour with the 4tbsp of water to make a slurry
- Add the slurry to the chicken mix and let it thicken
- Transfer the pie filling to a bowl and let it cool
- Cut the shortcrust pastry into quarters and place them in a muffin tray
- Fill each muffin mould with the filling and cover with the puff pastry
- Make slits in the puff pastry to let steam escape
- Brush the tops with egg wash and bake at 180*C for 20mins or until golden brown
Tips
For vegetarian version replace the chicken mince with plant based meat or tofu. And swap the egg yolk wash with milk
