THAI GREEN CURRY CHICKEN

INGREDIENTS:

  • 150g boneless chicken
  • 1 tbsp olive oil
  • 3 tbsp SOS Thai Green Curry Paste
  • 4 baby corn
  • 2 stalks of bok choy
  • 1/2 cup of water
  • 1/2 cup of coconut milk
  • 1 tsp lemon juice
  • Salt to taste

    METHOD:

    • Stir-fry the SOS Thai green curry paste in the olive oil
    • Add in the chicken & stir fry
    • Add in the sliced baby corn, sliced bok choy, water & let simmer till chicken is done
    • Add in the coconut milk & let simmer for 2 mins
    • Add salt to taste & a dash of lemon juice
