THAI GREEN CURRY CHICKEN

Ingredients:

  1. 150g boneless chicken
  2. 1 tbsp olive oil
  3. 3 tbsp SOS Thai Green Curry Paste
  4. 4 baby corn
  5. 2 stalks of bok choy
  6. 1/2 cup of water
  7. 1/2 cup of coconut milk
  8. 1 tsp lemon juice
  9. Salt to taste

METHOD:

  1. Stir-fry the SOS Thai green curry paste in the olive oil
  2. Add in the chicken & stir fry
  3. Add in the sliced baby corn, sliced bok choy, water & let simmer till chicken is done
  4. Add in the coconut milk & let simmer for 2 mins
  5. Add salt to taste & a dash of lemon juice
