THAI GREEN CURRY CHICKEN

SERVING: 1 PREP TIME: 10min COOK TIME: 15min
INGREDIENTS:
- 150g boneless chicken
- 1 tbsp olive oil
- 3 tbsp SOS Thai Green Curry Paste
- 4 baby corn
- 2 stalks of bok choy
- 1/2 cup of water
- 1/2 cup of coconut milk
- 1 tsp lemon juice
- Salt to taste
METHOD:
- Stir-fry the SOS Thai green curry paste in the olive oil
- Add in the chicken & stir fry
- Add in the sliced baby corn, sliced bok choy, water & let simmer till chicken is done
- Add in the coconut milk & let simmer for 2 mins
- Add salt to taste & a dash of lemon juice
