ROMESCO GRILLED CHICKEN

SERVING: 2 PREP TIME: 5min COOK TIME: 25min
INGREDIENTS:
- 6 pieces of chicken (drumsticks/thigh)
- 4 tbsp SOS Romesco
- 2 tsp lemon juice
- 2 tsp olive oil
- Salt for seasoning
METHOD:
- Make cuts in the chicken
- Mix the lemon juice & olive oil with the SOS Romesco to loosen it
- Rub this mix/marinade over the chicken. Keep some for basting the chicken half way through cooking.
- Heat the oven to 180ºC.
- Place the chicken on a baking tray and bake for 20min or until done.
- For the last 5mins, turn the setting to grill and finish cooking.
- Remove & enjoy with a side of salad or on its own.
