  • 6 pieces of chicken (drumsticks/thigh)
  • 4 tbsp SOS Romesco
  • 2 tsp lemon juice
  • 2 tsp olive oil
  • Salt for seasoning
  • Make cuts in the chicken
  • Mix the lemon juice & olive oil with the SOS Romesco to loosen it
  • Rub this mix/marinade over the chicken. Keep some for basting the chicken half way through cooking.
  • Heat the oven to 180ºC.
  • Place the chicken on a baking tray and bake for 20min or until done.
  • For the last 5mins, turn the setting to grill and finish cooking.
  • Remove & enjoy with a side of salad or on its own.
