ONE-POT GREEN CURRY NOODLES

INGREDIENTS:
  1. 150g Pad Thai noodles
  2. 1 carrot
  3. 1/2 green capsicum
  4. 1 small bowl scallions
  5. 1 tbsp olive oil
  6. 4 tsp SOS Green Curry
  7. 1.5 tbsp golden mountain seasoning
  8. 3 tsp coconut cream
  9. 300ml water
  10. Cilantro & Roasted peanuts to garnish

METHOD:

  1. Heat oil in a pot, add the SOS Green Curry & sauté.
  2. Add the carrots & capsicum & saute until the veggies soften.
  3. Add golden mountain seasoning & mix with the veggies.
  4. Add water, mix & let cook for a minute.
  5. Then add the coconut cream & mix before adding in the Pad Thai noodles.
  6. Finally, cover the pot & allow the noodles to soak up the liquid & cook.
  7. Once the noodles are cooked, add in the scallions, mix & well.
  8. Finally garnish with roasted peanuts & cilantro before serving.
