OLIVE VEGETABLE FRIED RICE

INGREDIENTS:

  1. 1 tbsp olive oil
  2. 3/4 cup chopped vegetables (carrots, broccoli, corn & mushrooms)
  3. 3 tbsps SOS Tuscan
  4. 2 garlic cloves
  5. 1 shallot
  6. 2 cups cooked brown rice
  7. Salt & pepper to taste
  8. Scallion, roasted cashews, fresh cucumber & cilantro for garnish

METHOD:

  1. Heat oil in a wok
  2. Stir-fry chopped garlic & chopped shallot till translucent
  3. Add in the chopped veggies & stir-fry for a couple of minutes
  4. Add in the SOS Tuscan, salt, pepper & finally the brown rice & cook for a few minutes to incorporate all the flavours
  5. Once finished cooking, transfer to a serving plate & add all the garnishes before serving
