OLIVE & CHICKEN LINGUINI

SERVING: 2 PREP TIME: 10min COOK TIME: 10min
INGREDIENTS:
- 200g chicken mince
- 120g linguine
- 3 tbsps SOS Tuscan Olive Tapenade
- 2 tbsp olive oili
- 4 sun-dried tomatoes
- 2 sprigs of spring onion
- 2 garlic cloves
- 1/2 tsp salt
METHOD:
- Marinate the chicken mince with the salt, pepper & grated garlic
- Wet both hands with some water & shape the chicken mixture into meatballs
- Heat a pan with the oil, shallow fry the meatballs until lightly browned or cooked through
- Boil the Linguine in a pot of water till al dente
- In the same pan that the meatballs were cooked in, sauté the Olive Tapenade for a min
- Add in the chicken meatballs, the linguine & toss well
- Now add in the sliced sun-dried tomatoes & give it another toss
- Garnish with chopped spring onions & serve hot!
