OLIVE & CHICKEN LINGUINI

SERVING: 2                        PREP TIME: 10min                        COOK TIME: 10min

INGREDIENTS:

  1. 200g chicken mince
  2. 120g linguine
  3. 3 tbsps SOS Tuscan Olive Tapenade
  4. 2 tbsp olive oili
  5. 4 sun-dried tomatoes
  6. 2 sprigs of spring onion
  7. 2 garlic cloves
  8. 1/2 tsp salt

METHOD:

  1. Marinate the chicken mince with the salt, pepper & grated garlic
  2. Wet both hands with some water & shape the chicken mixture into meatballs
  3. Heat a pan with the oil, shallow fry the meatballs until lightly browned or cooked through
  4. Boil the Linguine in a pot of water till al dente
  5. In the same pan that the meatballs were cooked in, sauté the Olive Tapenade for a min
  6. Add in the chicken meatballs, the linguine & toss well
  7. Now add in the sliced sun-dried tomatoes & give it another toss
  8. Garnish with chopped spring onions & serve hot!
