INDO-CHINESE CHILLI PANEER
Ingredients:
- 400g paneer/cottage cheese
- 1/2 red onion, 1 green bell pepper
- 2 fresh long green chillies, 1 stalk of scallion
- 2 garlic cloves, 1/2 inch ginger
- 3 tbsp canola oil (for shallowing frying)
- 1 tbsp canola oil (for the main recipe)
Ingredients (Batter):
- 2 tsp cornstarch
- 3 tbsp all purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup water ( more if needed)
Ingredients (Slurry):
- 1 tsp cornstarch
- 3 tbsp water
Ingredients (Sauce Mix):
- 2 tbsp SOS Red Chilli Sauce
- 2 tbsp SOS Green Chilli Sauce
- 4 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 2 tbsp rice vinegar
Method:
- Chop paneer into cubes
- Make a batter with the batter ingredients
- Heat 3 tbsp canola oil in a pan, dip paneer cubes into the batter & fry till golden on both sides
- Quarter red onion & separate petals, chop the capsicum & scallion, thinly slice green chillies, grate garlic cloves & ginger
- Make a slurry
- Make a sauce with the sauce mix ingredients
- Heat 1 tbsp canola oil in a pot, add garlic & ginger & sauté
- Next add onion, bell pepper & sauté
- Add in the slurry & the sauce mix
- Next, add in the paneer cubes and stir until paneer and veggies are coated with the sauce.
- Turn off the heat, add scallion & chillies for garnish and enjoy while hot!
