INDO-CHINESE CHILLI PANEER

Indo-Chinese Chilli Paneer

Ingredients:

  1. 400g paneer/cottage cheese
  2. 1/2 red onion, 1 green bell pepper
  3. 2 fresh long green chillies, 1 stalk of scallion
  4. 2 garlic cloves, 1/2 inch ginger
  5. 3 tbsp canola oil (for shallowing frying)
  6. 1 tbsp canola oil (for the main recipe)

Ingredients (Batter):

  1. 2 tsp cornstarch
  2. 3 tbsp all purpose flour
  3. 1/2 tsp salt
  4. 1/4 tsp black pepper
  5. 1/4 cup water ( more if needed)

Ingredients (Slurry):

  1. 1 tsp cornstarch
  2. 3 tbsp water

Ingredients (Sauce Mix):

  1. 2 tbsp SOS Red Chilli Sauce
  2. 2 tbsp SOS Green Chilli Sauce
  3. 4 tbsp light soy sauce
  4. 1 tbsp dark soy sauce
  5. 2 tbsp rice vinegar

Method:

  1. Chop paneer into cubes
  2. Make a batter with the batter ingredients
  3. Heat 3 tbsp canola oil in a pan, dip paneer cubes into the batter & fry till golden on both sides
  4. Quarter red onion & separate petals, chop the capsicum & scallion, thinly slice green chillies, grate garlic cloves & ginger
  5. Make a slurry
  6. Make a sauce with the sauce mix ingredients
  7. Heat 1 tbsp canola oil in a pot, add garlic & ginger & sauté
  8. Next add onion, bell pepper & sauté
  9. Add in the slurry & the sauce mix
  10. Next, add in the paneer cubes and stir until paneer and veggies are coated with the sauce.
  11. Turn off the heat, add scallion & chillies for garnish and enjoy while hot!
