HARISSA CHICKEN SKEWERS

INGREDIENTS:

2 skinless, boneless chicken breast halves - cut into 1 inch cubes
- 1 onion cut into 1 inch pieces
- 1 red bell pepper cut into 1 inch pieces
- 1 green bell pepper cut into 1 inch pieces
- 2 tbsp SOS Harissa paste for marination
- Salt to taste
- 2 tbsp olive oil
- 5 to 6 bamboo skewers or as needed, soaked in water for 30 minutes
METHOD:
- Thread the chicken and veggies on to the skewers
- Brush with the SOS Harissa
- Heat up a grill pan and add the olive oil
- Place the skewers in the hot pan
- Cook, turning frequently and brushing with more Harissa if needed, until nicely browned on all sides and the chicken is no longer pink in the center
- Serve with a green salad or by itself
