GRILLED GREEN CURRY CHICKEN IN COCONUT MILK

Ingredients:

  • 8 boneless chicken thighs
  • 3 tbsp SOS Thai Green Curry Paste
  • 1/2 cup coconut milk
  • 2 tbsp olive oil
  • 2 tsp lemon juice
  • 1/4 sliced onion for garnish
  • 1 stalk of spring onion for garnish
  • Salt to taste

    METHOD:

    • Mix in the SOS Thai green curry paste, the coconut milk and the 1 tsp lemon juice to make a marinade
    • Pour this over the chicken thighs and mix well
    • Heat up the grill or oven
    • Cook for 30 min or till done turning intermittently
    • Garnish with sliced onions, spring onion and a dash of lemon juice
