SPICY CHICKEN CHILI CON CARNE

SERVING: 1                        PREP TIME: 10min                        COOK TIME: 15min

INGREDIENTS:

  • 300 gm boneless chicken
  • 1/2 Onion, 1/2 Green bell pepper & 1/2 Tomato
  • 3 cloves garlic
  • 1 small bowl Cannellini beans
  • 1 small bowl frozen sweetcorn kernels
  • 2 tbsp SOS Circuit Breaker
  • 2 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 cup Chicken stock
  • Pinch of black pepper
  • Pinch of cayenne pepper
  • Avocado slices & Cilantro for garnish
  • Salt to taste
  • 1 tsp lemon juice
  • 1-2 Hard shell tacos

    METHOD:

    • Heat oil in a pot, add onion, green bell pepper, garlic & sauté until the veggies soften.
    • Add chicken to the pot and cook until half-done.
    • Add sweetcorn, cannellini beans, SOS Circuit Breaker. & sauté.
    • Add cumin, black pepper, cayenne pepper & chicken stock. Cover the pot and allow the chilli to simmer.
    • Once ready to serve, add salt to taste, lemon juice, cilantro & avocado slices for garnish.
    • Heat some hard shell tacos & lay on the side or crack into the bowl of chilli.
