SPICY CHICKEN CHILI CON CARNE

SERVING: 1 PREP TIME: 10min COOK TIME: 15min
INGREDIENTS:
- 300 gm boneless chicken
- 1/2 Onion, 1/2 Green bell pepper & 1/2 Tomato
- 3 cloves garlic
- 1 small bowl Cannellini beans
- 1 small bowl frozen sweetcorn kernels
- 2 tbsp SOS Circuit Breaker
- 2 tbsp olive oil
- 1/2 tsp cumin
- 1/2 cup Chicken stock
- Pinch of black pepper
- Pinch of cayenne pepper
- Avocado slices & Cilantro for garnish
- Salt to taste
- 1 tsp lemon juice
- 1-2 Hard shell tacos
METHOD:
- Heat oil in a pot, add onion, green bell pepper, garlic & sauté until the veggies soften.
- Add chicken to the pot and cook until half-done.
- Add sweetcorn, cannellini beans, SOS Circuit Breaker. & sauté.
- Add cumin, black pepper, cayenne pepper & chicken stock. Cover the pot and allow the chilli to simmer.
- Once ready to serve, add salt to taste, lemon juice, cilantro & avocado slices for garnish.
- Heat some hard shell tacos & lay on the side or crack into the bowl of chilli.
