Bursting with fresh ingredients and bold Thai flavors, the Tom Yum Salmon Bowl is a perfect balance of spice, citrus, and creaminess. Flaky, tender salmon sits atop fluffy couscous, crunchy red cabbage, crisp cucumber, and zesty red onion, all brought together with a rich and tangy dressing made from SOS Tom Yum Paste, coconut milk, and lemon juice. This bowl is light, refreshing, and packed with protein, making it an ideal meal for a nutritious lunch or dinner.
Ingredients
- 200g cubed salmon

½ tsp of pepper

½ tsp of dry parsley flakes

2 tsp olive oil
- 50g raw couscous
- 100ml water

½ tsp butter
- 50g sliced red cabbage

½ thinly sliced red onion
-
½ sliced cucumber

1 tbsp SOS Tom Yum Paste

1½ tbsp coconut milk
- 2 tsp lemon juice
Directions
Season the salmon with salt, pepper and parsley flakes.
Heat a pan with the spray oil and saute the salmon for 3 minutes on each side or until done.
Boil the water in a saucepan with ½ tsp of salt. Remove from heat. Add the couscous. Cover and let stand for 5 minutes.
Add butter and fluff the couscous with a fork, transfer it to a bowl.
To make the dressing, add the SOS Tom yum paste, coconut milk, lemon juice to a bowl and mix.
Assemble the bowl - to the bowl of couscous add the salmon, red cabbage, red onion and cucumber.
Lastly, add the dressing to the bowl and toss gently (opt) till it mixes well. You can avoid tossing as well.
Have it warm or cold!
Recipe Note
Pro Tip: Garnish with fresh cilantro and a sprinkle of chili flakes for extra heat. Swap the couscous with rice or quinoa if you like. Air fry the salmon if you prefer.
