Quick, spicy, cheesy and tasty roasted potatoes. Perfect for lunch or dinner!
Ingredients

450g Baby Potatoes
- 150g Buffalo Mozzarella
-
6 tsp SOS Harissa
- 1 capsicum
-
2 tbsps olive oil
- 10g chives
- Parsley flakes to garnish
Directions
Preheat an oven to 200ºC
Toss together halved potatoes, cubed capsicum and SOS Harissa
Drizzle olive oil on a baking tray and add the potato mix
Drizzle some olive oil on the potatoes
Sprinkle chives on top and place the tray in the oven to roast for 30 minutes or until done
Take the tray and while the potatoes are hot, tear and spread buffalo mozzarella on it
Sprinkle parsley flakes on top and place the tray back in for another 5 mins or just till the cheese melts
Remove from the oven and serve
Recipe Note
You can parboil the potatoes before which means to just slightly boil them to make them tender before roasting. This will reduce your roasting time and also help to ensure that the potatoes are creamy, soft and delicious in the inside.
