The secret to a great sandwich - SOS Romesco!
Ingredients

1 Ciabatta
-
2 tbsp SOS Romesco
-
1 tbsp Mayonnaise
-
1 Chicken breast fillet
-
2 tbsp bread crumbs
-
1 Egg
-
2 Onion slices
-
3 Tomato slices
-
2 Lettuce leaves
-
3 Bacon strips
-
2 tbsp Olive oil
Directions
Season the chicken breast fillet with salt and pepper
Beat the egg and dip the chicken fillet in it
Drop it in the bread crumbs and coat well
Heat a pan with the olive oil and shallow fry the chicken till golden brown on each side
Cover and cook till the chicken is cooked through
Cook the bacon strips in a the same pan
Slice the ciabatta in half and toast both the slices
Spread some of the SOS Romesco on the bottom slice and layer with onion, tomato, chicken fillet, bacon strips, lettuce and mayonnaise
Spread the remaining SOS Romesco on the top slice and close the sandwich
Easy weekday lunch is ready!
Recipe Note
You can air fry the chicken and the bacon. Do brush the chicken with olive oil before air frying
