Ingredients

Half a cabbage

4 tbsp SOS Romesco

125g Ricotta cheese

1 tbsp lemon juice

1 tsp salt

1½ tbsp olive oil
Directions
Add the romesco, the ricotta cheese and ½ tsp of salt to a blender and make a smooth blend to a smooth consistency.
Cut the cabbage into 4 quarters.
In a bowl mix 1 tbsp of the olive oil, ½ tsp of salt, chilli powder and lemon juice to make a marinade.
Baste the cabbage quarters with this marinade.
Add ½ tsp of olive oil to a heated grill pan.
Place the marinated cabbage quarters on to the heated grill pan. Let them char nicely on one side. Then flip and repeat. This will take about 2 to 3 minutes per side.
Meanwhile spread the romesco and ricotta cheese mix onto a plate.
Place the grilled cabbage on to the romesco and ricotta dip. Enjoy!
Recipe Note
Pro Tip: No grill? No problem! You can easily make the cabbage quarters in the oven. Simply prepare the cabbage as directed, then preheat your oven to 400°F (200°C). Arrange the quarters on a parchment-lined baking sheet and roast for 30-35 minutes, flipping halfway through, until they’re tender with crispy, charred edges.
