Sometimes all you need is a sandwich!
Ingredients

150 Chicken breast fillet mince
-
1 Ciabatta
-
4 tbsp SOS Harissa
-
½ Onion chopped
-
1 tbsp Bread crumbs
-
1 Egg
-
2 tbsp Spring onion
-
½ tsp Salt
-
½ tsp Black pepper
-
3 Slices Buffalo Mozzarella cheese
-
1 tbsp Olive oil
Directions
In a bowl mix the chicken mince with the onion, spring onion, bread crumbs, egg, salt and pepper
Form into meatballs. Makes about 4 meatballs
Brush with olive oil and stick them in the air fryer for 10 minutes or pan fry them till golden brown
Cut the bread in half and toast both the halves
On one half apply 2 tbsp of the SOS Harissa
Place 2 or 3 meatballs on it with the cheese slices and place on a hot pan with the lid or in an air fryer till the cheese melts
Top up with 2 more tbsp of SOS Harissa. Close the sandwich and cut in half
Eat while hot
Recipe Note
Add in fresh herbs like cilantro or parsley to the meatball mix for added freshness. You can use any kind of bread of your choice. Swap the buffalo mozzarella with any sliced or grated cheese from your pantry.
