Theres no more food iconic in Australia than a meat pie! Try replacing the beef with chicken like this recipe. Its as tasty. We added our SOS Romesco to give it a spicy twist and took the beloved comfort food to the next level. This rich, smoky, and slightly spicy sauce adds an irresistible depth of flavor to the traditional meat filling, making every bite unforgettable.
Ingredients

500g chicken mince
- Dried herbs to mix

1/2 cup water + 4tbsp water

1 medium size onion
- 4 grated garlic cloves
- 2 carrots

4 tbsp SOS Romesco

1 tbsp cornflour

2 beaten egg yolks
- 3 sheets of shortcrust pastry
- 2 sheets of puff pastry

1 tbsps olive oil
Directions
Sauté garlic in a heated pot with the olive oil for a min.
Add the onions, carrots, chicken mince and sauté.
Now, add the SOS Romesco, dried herbs and mix. Add 1/2 cup water, cover the pot and let everything cook.
Once cooked, mix 4 tbsps water with 1 tbsp cornflour, add to the chicken mix and let the filling thicken.
Transfer the pie filling to a large bowl and allow it to reach room temperature.
Quarter the shortcrust sheets. Use a muffin tray to form cups and add the filling to each cup. Then use the puff pastry sheets to cover the cups and make slits to let the steam escape.
Brush the tops with the egg-wash.
Bake at 180ºC for 20 mins before serving.
Recipe Note
For vegetarian version replace the chicken mince with plant based meat or tofu. And swap the egg yolk wash with milk.
