Pineapple fried rice is a dish that combines the sweet, tangy flavors of fresh pineapple with savory fried rice. It is most commonly associated with Thai cuisine, although variations of it can be found in other Southeast Asian countries.
Try our version which we have made with our SOS Pineapple chilli sauce and is very easy to make!
Ingredients

150g cooked rice

2 tbsp SOS pineapple sauce
-
½ onion
-
2 sprigs of spring onion

¼ green capsicum
-
1 beaten egg
-
6 prawns
-
3 tsp fish sauce
-
3 tsp soy sauce
-
1 tsp curry powder
-
1 ½ tbsp olive oil
-
½ tsp salt
Directions
Heat a pan with the olive oil
Cook the prawns in the olive oil. Flip each prawn till both sides are cooked. Remove and keep the prawns aside
Pour the beaten egg in the same pan and scramble the egg
Add the onions and capsicum and stir fry for a minute
Add in the fish sauce and soy sauce
Add in the SOS pineapple sauce
Next in goes the curry powder and rice
Mix everything together
Lastly add the prawns back into the pan
Garnish with the spring onion and plate it
Recipe Note
Enjoy with cucumber on the side. And add toasted cashews on top to add that extra crunch!
You can make a vegetarian version of the recipe. Just substitute the fish sauce with more soy sauce and substitute tofu for shrimp. Replace the egg with the same amount of tofu
