Yellow Curry Salmon

Ingredients

  • 200g Salmon fillet
  • 1 tbsp Olive oil
  • 4 tbsp / 60ml Coconut cream
  • 4 Baby corn
  • 2 tsp SOS Thai Yellow curry paste
  • 1/2 Cup Water
  • 2 tsp Lime juice
  • 1/2 Salt 
  • Fresh Coriander for garnish

Method

  1. Heat a pot, add the olive oil and add the yellow curry paste
  2. Saute for a minute till the paste releases its flavour
  3. Now add in the salmon cubes
  4. Next add in sliced baby corn 
  5. Add in the water and let it simmer for 2 minutes
  6. Now add the coconut cream and let it simmer for a few minutes 
  7. Once the salmon is cooked put of the heat
  8. Add the lemon juice and salt to taste (if needed)
  9. Garnish with the fresh coriander

Tips

Swap the salmon with chicken, prawns or tofu.

For the tofu, stir fry the the tofu until golden brown and keep aside. Add it in later once the coconut milk is added.

Serve with steamed jasmine rice to make a complete meal.
