Tom Yum Tofu Toasties

Ingredients
- 1/2 Onion chopped
- 1/4 Capsicum chopped
- 150g Tofu scrambled
- 2 Bread slices
- 2 Chillies chopped
- 1 tbsp Olive oil
- 2 tsp SOS Tom yum paste
Method
- Heat the olive oil in a pan
- Add in the SOS Tom yum paste and stir for a min
- Add in the chopped veggies and scrambled tofu and mix well
- Toast the bread slices
- Layer the tofu mixture on the bread
- Garnish with chopped chillies
Tips
Firm tofu works best. Add veggies of your choice. Squeeze a bit of lemon for extra tanginess
