Tom Yum Soup with Chicken
Tom Yum is one of Thailand’s most iconic soups, known for its vibrant blend of herbs and spices that awaken the senses. Traditionally made with a fragrant broth infused with lemongrass, galangal, lime, and chillies but make it easily with SOS Tom yum paste. This spicy Thai soup is so full of flavour. Best of all, this soup is ready to serve in just a few minutes, for a quick midweek meal or a light weekend lunch.

Ingredients
- 300g Chicken thigh fillets - boneless
- 1/2 bunch of Chye sim
- 3 tbsp of Coconut cream
- 2 tbsp SOS Tom yum paste
- 2 Green chilli padi
- 1 tsp Lemon juice
- 2 tsp Fish sauce
- 2 cup Water
- Fresh coriander for garnish
Method
- Boil the water in a pot and add the chopped chilli
- Add the tom yum paste and fish sauce let simmer for a minute
- Chop the chicken in bite sized pieces and add to the pot
- Cover and let the chicken cook
- Once the chicken is cooked add in the coconut milk and simmer for a minute
- Chop the chye sim into halves
- Turn off the heat and add in the chye sim
- Garnish with lemon juice and fresh coriander
Tips
You can make the soup without the coconut cream if you prefer. Add in the lemon juice only when the heat is turned off to retain its vibrancy.
To make a vegetarian version replace the chicken with veggies and opt out of adding the fish sauce.
Serve with a bowl of steamed rice or add in rice noodles to the soup.
