Tom Yum Sea Bass

Ingredients  

  • 4 Sea bass fillets (2 whole fish)
  • 3 tbsp SOS Tom yum paste 
  • 4 tbsp of Coconut cream
  • 2 tbsp Olive oil
  • 2 tsp Lemon juice
  • 2 tsp Fish sauce
  • 1 cup Water
  • 1 tsp Salt
  • Fresh coriander for garnish
  • Chilli oil for garnish (optional)

Method

  1. Heat a pan/wok and add the oil
  2. Once hot, shallow fry the fish fillet for 3 minutes on each side. Skin side down first to get a nice crispy texture. Then flip and cook for another 3 minutes on the other side. Remove and keep aside.
  3. In the same pan/wok add the water
  4. Next add the tom yum paste and mix well
  5. Now add the fish sauce and coconut milk and mix well
  6. Once it simmers for a minute, turn off the heat and add the lemon juice
  7. Now assemble the dish 
  8. In a deep dish, lay the sea bass and gently pour the tom yum soup around it
  9. Garnish with coriander 
  10. Drizzle the chilli oil on top if you like it extra hot

Tips

Serve with rice or have on its own. Skip the chilli oil if you prefer less spice.
