Ingredients
- 200g Salmon cubed
- 1 tsp Salt
- 1/2 Pepper
- 1/2 Parsley flakes
- 1 tbsp Olive oil
- 50g Raw Couscous
- 100ml Water
- 1/2 tsp Butter
- 1 small bowl of Red cabbage - sliced
- 1/2 Red Onion - thinly slilced
- 1/2 Cucumber - sliced
- 1 tbsp SOS Tom Yum paste
- 1 1/2 Coconut milk

Method
- Season the salmon with salt, pepper and parsley flakes
- Heat a pan and add the oil to it
- Add the salmon to the hot pan and saute each side for 3 mins
- Boil the water in a saucepan, shut off the heat, add the couscous to it and cover and let it sit for 5 mins
- Add the butter to the couscous and mix well with a fork. Transfer to a serving bowl
- To make a dressing add the tom yum paste, coconut milk and lemon juice and mix well
- Assemble the bowl - add in the cabbage, cucumber, onion and salmon on top of the couscous
- Add the dressing and toss well
Tips
Garnish with fresh cilantro and a sprinkle of chili flakes for extra heat. Swap the couscous with rice or quinoa if you like. Air fry the salmon if you prefer.
