Tofu & Veggie Stir Fry

Ingredients
- 150g Tofu
- 1/2 Capsicum
- 2 tbsp Olive oil
- 1 tbsp SOS Thai Green curry paste
- 1 tsp Lime juice
- 1 tsp Soy sauce
Method
- Cut the tofu into 1 inch cubes
- Heat a pan and add 1 tbsp of olive oil
- Add the tofu and stir fry till it gets a light golden color
- Remove and keep aside
- To the same pan add the second tbsp of olive oil
- Now add the green curry paste and stir fry for a minute
- Add in the cubed capsicum, stir fry and cover and cover and let cook half way through. Make sure it still remains crunchy
- Now add the tofu back in and add the soy sauce. Stir fry for another minute till everything is well mixed
- Turn off the heat and add in the lemon juice
Tips
Try and use a firm tofu as it comes out more crispy. You can add in a dash of coconut cream if you want a bit of sauce.
