Tofu & Veggie Stir Fry

Ingredients  

  • 150g Tofu
  • 1/2 Capsicum
  • 2 tbsp Olive oil
  • 1 tbsp SOS Thai Green curry paste
  • 1 tsp Lime juice
  • 1 tsp Soy sauce

Method

  1. Cut the tofu into 1 inch cubes
  2. Heat a pan and add 1 tbsp of olive oil
  3. Add the tofu and stir fry till it gets a light golden color
  4. Remove and keep aside
  5. To the same pan add the second tbsp of olive oil
  6. Now add the green curry paste and stir fry for a minute
  7. Add in the cubed capsicum, stir fry and cover and cover and let cook half way through. Make sure it still remains crunchy
  8. Now add the tofu back in and add the soy sauce. Stir fry for another minute till everything is well mixed
  9. Turn off the heat and add in the lemon juice

Tips

Try and use a firm tofu as it comes out more crispy. You can add in a dash of coconut cream if you want a bit of sauce.
