Thai Yellow Curry Crusted Tofu

Ingredients

  • 225g Firm Tofu
  • 2 tbsp Bread crumbs
  • 1 tbsp Corn flour 
  • 4 tbsp Olive oil
  • 4 tbsp / 60ml Coconut cream
  • 1/2 Capsicum
  • 1/4 Onion
  • 4 tsp SOS Thai Yellow curry paste
  • 1/2 Cup Water
  • 1 tbsp Water
  • 1/2 Lemon
  • 1/2 tsp Salt 
  • 2 Cups Boiled Jasmin rice
  • Fresh Coriander for garnish

Method

  1. Slice the tofu block in 2 horizontally
  2. Mix 1 tbsp of SOS yellow curry paste with 1 tbsp of water and pour over the tofu slices. Set aside for 10 minutes
  3. Chop small the onion and capsicum 
  4. Heat a wok and add the 1 tbsp of olive oil 
  5. Stir fry the onion and capsicum for 2 minutes
  6. Now add the 3 tbsp of the yellow curry paste and stir fry for 2 more minutes 
  7. Mix the coconut cream and 1/2 cup of water and add it to the wok. Mix well. Cover and let simmer for 1 minute or till it comes to a light boil
  8. Put the heat off and add the salt and lemon juice
  9. Mix the bread crumbs and corn flour
  10. Take the tofu slices that were marinating in the yellow curry and coat well with the bread crumb mix
  11. Heat a pan and add 3 tbsp of olive oil 
  12. Gently add in the tofu slices and fry till they turn a golden brown on each side. This will take about 2 mins on each side
  13. Now assemble everything. Put the boiled rice on a plate, spoon the yellow curry over it, place one piece of fried tofu on it and garnish with fresh coriander

Tips

Instead of frying the tofu you can air fry it. Just spray with oil or drizzle 1tsp on each side.

You can swap the veggies with any other veggies of your choice.
