Thai Yellow Curry Chicken

Ingredients

  • 400g Chicken thigh fillet - boneless
  • 1/4 Cup Water  
  • 2 tbsp SOS Thai Yellow curry paste
  • 1 tbsp Olive oil
  • 3/4 cup Coconut cream
  • 2 tsp Lemon juice
  • Coriander for garnish 

Method

  1. Heat a pot, add the olive oil and saute the thai yellow curry paste for a minute till the spices release their aroma
  2. Cut the chicken thigh fillet in big chunks and add to the pot. Give each side 1 minutes to cook.
  3. Next add in the coconut cream and water.
  4. Cover and cook till the chicken is cooked through.
  5. Put off the heat, add lemon juice and mix well.
  6. Garnish with fresh coriander.

Tips

Serve with steamed jasmine rice. Add in veggies of your choice if you like.
