Tofu Fried Rice

Ingredients

  • 250g Tofu
  • 2 tbsp Olive oil
  • 2 Chye sim stalks
  • 2 tbsp SOS Green curry paste
  • 2 tbsp Coconut cream
  • 2 cups Boiled rice
  • 1 tsp Lime juice
  • Fresh coriander for garnish
  • Salt to taste

Method

  1. Chop the tofu into small cubes 
  2. Heat a pan, add the olive oil and stir fry SOS green curry paste for 1 minute
  3. Add in the tofu and stir fry for a 1 minute
  4. Now add in chopped up chye sim and stir fry
  5. Next add in the coconut cream and mix well
  6. Now in goes the boiled rice. Mix it well. Sprinkle a bit of water if needed
  7. Take it off the heat and garnish with lemon juice and fresh coriander 

Tips

Use extra firm tofu in this recipe. You can swap the veges as per your choice. One day old rice world better.
