Spicy Watermelon Salad

Ingredients
- 2 Watermelon slices (approx 500g)
- 1/2 block of Feta cheese
- 5 to 6 Mint leaves
- 1 tsp Sesame seeds - toasted
- 1 tbsp Olive oil
- 3 tsp SOS Mango lemon chilli sauce
- 2 tbsp Fish sauce
- 3 tsp Red wine vinegar
- 1 tbsp Chilli oil
- 1/2 tsp Salt
Method
- Chop the watermelon into cubes
- Roughly chop the mint leaves
- Toast the sesame seeds till light golden in color
- Add the mango sauce, red wine vinegar and salt to make a simple dressing
- Pour the dressing over the salad and toss well
Tips
You can swap the red wine vinegar for lemon juice. Use chilled watermelon. Keeping the watermelon cold enhances its refreshing quality and balances the spicy kick of the sauce. Add the dressing just before serving. This keeps it fresh. You can even add cucumber or onion for that extra crunch
