Spicy Roast Potatoes

Ingredients
- 15 Baby potatoes
- 150g Buffalo Mozzarella
- 6 tsp SOS Harissa
- 1 Capsicum
- 2 tbsp Olive oil
- 1 tbsp fresh Chives
- 1 tsp Dried Parsley flakes
- 1 tsp salt
Method
- Preheat an oven to 180*C
- Toss together the halved potatoes (skin on) and the cubed capsicum with the Harissa sauce
- Brush a baking dish with 1 tbsp olive oil and layer the potatoes on it
- Drizzle the other tbsp of olive oil on the potatoes
- Sprinkle the chopped chives on the potatoes and bake for 25 minutes or until the potatoes cook through
- Take the dish out. Tear the buffalo mozzarella and layer on the potatoes while hot
- Turn the setting on grill and put the dish back in for 5 minutes or till the cheese melts
- Remove and sprinkle the salt
- Garnish with the parsley flakes
Tips
You can even parboil the potatoes for 8–10 minutes, then shake them gently to rough up the edges before roasting — this gives you that perfect crunch
Serve alongside grilled meats, eggs, or a fresh salad — they’re perfect for brunch, barbecues, or cozy dinners.
