Smoky Harissa Eggplant Dip

Smoky, creamy, and full of spice — this Eggplant Dip made with SOS Harissa Paste is a bold twist on the classic baba ganoush. Roasted eggplant blends beautifully with fiery harissa, garlic, and lemon for a rich, flavour-packed dip that’s perfect with pita, crackers, or fresh veggies.

Ingredients  

  • 1 Medium size Eggplant
  • 4 tsp SOS Harissa
  • 2 tbsp Cream cheese
  • 1 tsp Olive oil
  • 1 tsp salt (opt)
  • 1 tsp lime juice
  • 1/2 tsp Red chilli flakes
  • 1/2 tsp  dried Basil or Parsley 

Method

  1. Grill the eggplant over an open flame of a gas stove. Medium flame
  2. Let the eggplant char on the outside. Pierce a skewer or a fork to make sure it cooked through
  3. Cool and peel the eggplant
  4. Now put the eggplant, cream cheese, lime juice and harissa in a blender and blitz well
  5. Transfer to a serving bowl
  6. Drizzle the olive oil on it 
  7. Sprinkle the chilli flakes and the dried herbs

Tips

You can cook the eggplant in an oven or in an airfryer. Cooking times will vary. 

Serve with crackers, pita bread or veggie sticks.
