Salmon on Couscous

Ingredients
- 1 Salmon steak (approx 150g)
- 1/2 cup uncooked Couscous
- 3 tsp SOS Harissa
- 1 Capsicum
- 1 tbsp Olive oil
- 2 Green chillies
- 1 tbsp Fresh Parsley
- 1 tsp Butter
- 1 tsp salt
- 1/2 cup Water
Method
- Marinate the Salmon with the Harissa
- Heat a pan and add oil to it
- Once hot lay the salmon on it, skin side first
- Let it sear for 2 to 3 minutes. Flip and do the same on the other side
- Meanwhile boil the water, add salt to it. Then add the couscous, stir, put off the heat, cover and let it sit for 5 minutes
- Remove the cover and add the butter to the couscous and fluff it with a fork
- Scoop the couscous and layer on a serving dish
- Place the salmon on top and garnish with the chopped chillies and parsley
Tips
Finish the dish with a squeeze of lemon or a drizzle of olive oil just before serving to lift the flavours.
Toss the couscous with chopped herbs like parsley, mint, or coriander for a light, refreshing base.
Serve with a side of Greek yogurt or tzatziki to balance the spice and add creaminess.
