Salmon on Couscous

Juicy, perfectly pan fried salmon steak marinated in SOS Harissa Paste — smoky, spicy, and full of flavour. Served on a bed of fluffy couscous with fresh herbs and lemon, this dish brings bold North African-inspired flavours to your dinner table in under 30 minutes.

Ingredients  

  • 1 Salmon steak (approx 150g)
  • 1/2 cup uncooked Couscous
  • 3 tsp SOS Harissa
  • 1 Capsicum
  • 1 tbsp Olive oil
  • 2 Green chillies
  • 1 tbsp Fresh Parsley
  • 1 tsp Butter
  • 1 tsp salt
  • 1/2 cup Water

Method

  1. Marinate the Salmon with the Harissa
  2. Heat a pan and add oil to it
  3. Once hot lay the salmon on it, skin side first
  4. Let it sear for 2 to 3 minutes. Flip and do the same on the other side
  5. Meanwhile boil the water, add salt to it. Then add the couscous, stir, put off the heat, cover and let it sit for 5 minutes
  6. Remove the cover and add the butter to the couscous and fluff it with a fork
  7. Scoop the couscous and layer on a serving dish
  8. Place the salmon on top and garnish with the chopped chillies and parsley   

Tips

Finish the dish with a squeeze of lemon or a drizzle of olive oil just before serving to lift the flavours.

Toss the couscous with chopped herbs like parsley, mint, or coriander for a light, refreshing base.

Serve with a side of Greek yogurt or tzatziki to balance the spice and add creaminess.
