Ricotta & Harissa Pasta

Ingredients
- 3/4 cup Penne uncooked
- 2 strips of Bacon
- 1/2 Chorizo sausage
- 4 Sun dried tomatoes
- 3 tsp SOS Harissa
- 2 tbsp Ricotta cheese
- 2 tbsp Olive oil
- 1/2 tsp Salt
- 1 tbsp Parmesan cheese
- Dried herbs for garnish
Method
- Boil the water in a pot and add the salt
- Add the pasta to the water and cook till almost done or al dente
- Drain and retain some of the pasta water for later use
- Meanwhile heat a pan and add the olive oil
- Saute the chopped bacon and chorizo
- Once a little brown add in the chopped sun dried tomatoes
- Next add in the harissa and ricotta cheese and mix well. Add in the pasta water to loosen the sauce if needed.
- Now add in the cooked pasta and mix well
- Garnish with the dried herbs and parmesan before serving
Tips
Want to make it vegetarian? Just swap the bacon and sausage for mushrooms or tofu.
If you don't have ricotta, use crumbled cottage cheese or a bit of cream!
