Lamb Mince Pappardelle

Ingredients
- 200g Lamb mince
- 150g / 1 cup Pappardelle - uncooked
- 1/2 Onion
- 2 Garlic cloves
- 8 tbsp SOS Harissa
- 2 tbsp Olive oil
- 2 tbsp Parmesan cheese
Method
- Heat a pan, add the olive oil and saute the chopped onion and grated garlic till translucent
- Add in the lamb mince and brown it
- Now add the Harissa, mix well and let it simmer for a min
- Meanwhile boil water and cook the pappardelle till al dente (almost done)
- Drain and retain some of the water
- Add the pasta to the meat sauce
- Add in some of the pasta water is needed
- Add salt to taste
- Serve hot with the parmesan cheese on top
Tips
Brown the lamb. When adding the lamb to the saucepan, let it cook for a few minutes to develop a light crust before stirring it. This enhances the flavor in the pan. Always save the pasta water for the sauce. Before draining the pasta, reserve a cup of the starchy water to stir into the sauce just before the pasta finishes cooking.
