  • 2 tbsp Olive oil
  • 2 tbsp Parmesan cheese

Method

  1. Heat a pan, add the olive oil and saute the chopped onion and grated garlic till translucent

  3. Now add the Harissa, mix well and let it simmer for a min
  4. Meanwhile boil water and cook the pappardelle till al dente (almost done)
  5. Drain and retain some of the water
  6. Add the pasta to the meat sauce
  7. Add in some of the pasta water is needed
  8. Add salt to taste
  9. Serve hot with the parmesan cheese on top

Tips

Brown the lamb. When adding the lamb to the saucepan, let it cook for a few minutes to develop a light crust before stirring it. This enhances the flavor in the pan. Always save the pasta water for the sauce. Before draining the pasta, reserve a cup of the starchy water to stir into the sauce just before the pasta finishes cooking.
