Ingredients
- 4 Eggs
- 350g Sausage meat (6 large sausages or 10 to 12 small sausages)
- 1 Onion
- 1 tsp dried or fresh parsley
- 4 tbsp SOS Harissa
- 11/2 tbsp Olive oil
Method
- Heat a pan, add the olive oil and saute the chopped onion till translucent
- Add in the chopped sausages or remove the meat from the casing and saute till golden brown
- Now add the Harissa, mix well and let it simmer for a min
- Crack one egg at a time and drop on this mixture
- Cover the pan with a lid and let the eggs cook to your liking
- Garnish with the dried or fresh parsley
Tips
This goes well with a crusty bread or even pita bread.
For vegetarian version replace the chicken mince with plant based meat or tofu. And swap the egg yolk wash with milk
