Harissa Chickpea Soup

Ingredients
- 1 small bowl diced Carrots
- 2 Onions
- 1 small bowl Corn kernels
- 1 large bowl Canned Chickpeas
- 1 bowl cooked Lentils (red or yellow)
- 4 tbsp SOS Harissa
- 2 tbsp Olive oil
- 1 cup Water
- 1 1/2 tbsp Cooking cream
- 1/2 tsp salt (opt)
- Coriander for garnish
Method
- Heat a pot and add the oil
- Saute the chopped onions till translucent
- Add in the diced carrots and corn kernels and saute till half cooked
- Now add in the lentils and chickpeas
- Next add in the Harissa and water and mix well
- Cover the pot and let everything simmer for 2 to 3 minutes
- Remove the lid and add in the cream. Mix well
- Lastly add in the salt if needed
- Garnish with the chopped coriander
- Serve hot
Tips
Adjust the spice level - If you prefer a milder soup, use less Harissa Paste or add in some yogurt or coconut cream to balance the heat.
Add more veggies of your choice. Spinach, kale, or zucchini during the last few minutes of cooking, will add in more nutrition.
Serve with crusty bread, pita, or a dollop of Greek yogurt for extra creaminess — perfect for soaking up the rich, spicy broth.
