Ingredients
- 150g Tofu

1 tbsp Olive oil
- 2 Sourdough bread slices
- 1/2 Onion
- 1/4 Capsicum
- 2 tbsp SOS Green curry paste
- 1/2 Cup Water
- 1 tbsp Coconut cream
- 1 tsp Lime juice
- 2 Red chillies
- Salt to taste
Method
- Heat a pan, add the olive oil
- Add in the SOS Green curry paste and stir fry for a min
- Add in the chopped onion and chopped capsicum and saute for a min
- Scramble the tofu and add it in and mix well
- Add in the coconut cream and lime juice. Mix well
- Meanwhile toast the bread slices
- Layer the hot tofu mix on the bread
Tips
Use extra firm tofu in this recipe for crispier tofu, or medium tofu if you prefer a softer texture. You can swap the vegges as per your choice. This is a protein rich brekkie for vegetarian!
