Thai Green Curry Tofu Toasties

Ingredients

  • 150g Tofu
  • 1 tbsp Olive oil
  • 2 Sourdough bread slices
  • 1/2 Onion
  • 1/4 Capsicum
  • 2 tbsp SOS Green curry paste
  • 1/2 Cup Water
  • 1 tbsp Coconut cream
  • 1 tsp Lime juice
  • 2 Red chillies
  • Salt to taste

Method

  1. Heat a pan, add the olive oil
  2. Add in the SOS Green curry paste and stir fry for a min
  3. Add in the chopped onion and chopped capsicum and saute for a min
  4. Scramble the tofu and add it in and mix well
  5. Add in the coconut cream and lime juice. Mix well
  6. Meanwhile toast the bread slices
  7. Layer the hot tofu mix on the bread

Tips

Use extra firm tofu in this recipe for crispier tofu, or medium tofu if you prefer a softer texture. You can swap the vegges as per your choice. This is a protein rich brekkie for vegetarian!
