Ingredients
- 400g Tofu

1 tbsp Olive oil
- 5 Broccoli florets
- 5 Baby corn
- 2 tbsp SOS Green curry paste
- 1/2 Cup Water
- 1 Cup Coconut cream
- 1 tsp Lime juice
- Salt to taste
Method
- Heat a pan, add the olive oil and stir fry the tofu cubes till golden brown
- Remove and keep aside
- In the same pan stir fry the Green curry paste for a minute
- Next add in the broccoli, sliced baby corn and stir fry for a minute
- Add in the water and let it simmer for 2 minutes
- Now add the tofu back in
- Pour in the coconut cream and let simmer for a minute
- Put off the heat and add the lemon juice and salt to taste (if needed)
Tips
Use extra firm tofu in this recipe for crispier tofu, or medium tofu if you prefer a softer texture. You can swap the veges as per your choice. Serve with steamed jasmine rice for a full meal. Or add in rice noodles to make a noodle soup.
