Ingredients
- 2 Chicken thigh fillets - boneless
- 2 tbsp Olive oil
- 3 tbsp SOS Green curry paste
- 1/2 Cup Water
- 1/2 Cup Coconut cream
- 1 tsp Lime juice
- 1 tbsp Fish sauce
- Fresh Coriander for garnish
Method
- Heat a pot, add the olive oil and add the SOS paste and saute for a minute
- Add in the diced chicken and stir fry for a few minutes
- Next add in the water, cover and let the chicken cook for 10 minutes or until done
- Now add in coconut cream and fish sauce and let it simmer for a couple of minutes
- Turn off the heat and garnish with lemon juice and coriander
Tips
You can replace the chicken thigh with chicken breast or prawns.
Serve with steamed jasmine rice for a full meal. Or add in rice noodles to make a noodle soup.
