Tom Yum Pork Rice

Ingredients
- 200g pork mince
- 1 tbsp dark soy sauce
- 1 tbsp olive oil
- 2 sprigs of spring onion chopped
- 2 garlic cloves minced
- 1 cup water
- 2 tbsp SOS tom yum paste
- 1 tsp fish sauce
- 2 tsp lemon juice
- 2 sliced green chillies
- 4 tbsp coconut cream
- 1tsp salt
- 1 cup boiled rice
- 1 boiled egg
Method
- Heat the water in a pot.
- Add the sliced chillies, SOS Tom Yum Paste, fish sauce, coconut milk and mix.
- Bring to a boil and turn off the heat. Add the lemon juice and keep aside.
- Heat the olive oil in a pan.
- Add the minced garlic, chopped spring onion and sauté.
- Add in the pork mince, spread throughout the pan and let it brown. Do not move it too much. Let it get a nice crisp.
- Add the soy sauce, mix with the pork mince, turn off the heat and keep aside.
- Soft-boil 1 egg.
- Plate everything - Form a rice dome and add to a serving bowl, ladle the Tom Yum broth around the rice, slice the egg into half and add next to the rice, add the pork on top of the rice and garnish with spring onion.
Tips
Drizzle some chilli oil if you want more spice. This recipe works well with chicken too.
