Chicken Burrito with Thai flavours
This chicken Thai yellow curry burrito brings the best of both worlds — Mexican comfort meets bold Thai flavours. Tender chicken is cooked in a rich, aromatic yellow curry paste, then wrapped in a warm tortilla with veggies and fresh avocado for the ultimate fusion meal. It’s an easy weeknight recipe.

Ingredients
- 150g Chicken breast fillet - boneless
- 1 Tortilla
- 1 1/2 tbsp SOS Yellow curry paste
- 1/4 Onion
- 1/4 Tomato
- 1/4 Capsicum
- 1/2 Avocado
- 1 1/2 tbsp Olive oil
- 1/4 bowl of shredded cheese
- 1 tsp Salt

Method
- Mince the chicken in a food processor.
- Heat a wok or pan and add the olive oil.
- Add in the SOS Thai yellow curry paste and saute for a minute to release its flavours.
- Next add in the chicken and stir fry till almost done.
- Now add in the diced capsicum and coconut milk and let cook for couple of minutes till the mixture dries up a bit.
- Chop the onion, tomatoes and mash the avocado and mix some salt in it for taste.
- Lay the tortilla and spread the avocado on it.
- Place the chicken mix in the middle.
- On each side of the chicken mix, place the onion and tomatoes.
- Add the shredded cheese on the chicken.
- Fold the tortilla to make a burrito.
- Heat up a sandwich press. Place the burrito and close gently. Don't clamp it shut.
- Once nice and golden on the top, remove and cut in two.
Tips
You can add rice in the burrito if you like. Serve with a salad on the side or with a mayo and hot sauce dip. If you dont have a sandwich press, heat a pan and warm the burrito till golden brown on each side.
