SPICY POTATOES WITH BUFFALO MOZZARELLA

INGREDIENTS:
  1. 650g Baby Potatoes
  2. 250g Buffalo Mozzarella
  3. 4 tbsps SOS Fury - Red Chilli sauce
  4. 1 capsicum
  5. 2 tbsps olive oil
  6. 10g chives
  7. Parsley flakes to garnish

METHOD:
  1. Preheat an oven to 230ºC.
  2. Toss together halved potatoes, cubed capsicum & SOS Fury.
  3. Drizzle olive oil on a baking tray & add the potato mix.
  4. Sprinkle chives on top and place the tray in the oven to roast for 45 mins.
  5. Take out the tray, tear & sprinkle buffalo mozzarella on the potato mix.
  6. Sprinkle parsley flakes on top and place the tray back in for another 15 mins to finish cooking or till the cheese melts.
  7. Remove from the oven and serve.
