SPICY POTATOES WITH BUFFALO MOZZARELLA

INGREDIENTS:
  • 650g Baby Potatoes
  • 250g Buffalo Mozzarella
  • 4 tbsps SOS Harissa
  • 1 capsicum
  • 2 tbsps olive oil
  • 10g chives
  • Parsley flakes to garnish

METHOD:
  • Preheat an oven to 230ºC.
  • Toss together halved potatoes, cubed capsicum & SOS Harissa.
  • Drizzle olive oil on a baking tray & add the potato mix.
  • Sprinkle chives on top and place the tray in the oven to roast for 45 mins.
  • Take out the tray, tear & sprinkle buffalo mozzarella on the potato mix.
  • Sprinkle parsley flakes on top and place the tray back in for another 15 mins to finish cooking or till the cheese melts.
  • Remove from the oven and serve.
