SPICY POTATOES WITH BUFFALO MOZZARELLA
SERVING: 3 PREP TIME: 10min COOK TIME: 20min
INGREDIENTS:- 650g Baby Potatoes
- 250g Buffalo Mozzarella
- 4 tbsps SOS Harissa
- 1 capsicum
- 2 tbsps olive oil
- 10g chives
- Parsley flakes to garnish
METHOD:
- Preheat an oven to 230ºC.
- Toss together halved potatoes, cubed capsicum & SOS Harissa.
- Drizzle olive oil on a baking tray & add the potato mix.
- Sprinkle chives on top and place the tray in the oven to roast for 45 mins.
- Take out the tray, tear & sprinkle buffalo mozzarella on the potato mix.
- Sprinkle parsley flakes on top and place the tray back in for another 15 mins to finish cooking or till the cheese melts.
- Remove from the oven and serve.
