OLIVE & BEYOND MINCE PENNE

INGREDIENTS:

  • 120g penne
  • 230g Beyond meat mince
  • 2 tbsps SOS Tuscan Olive Tapenade
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 4 sun-dried tomatoes
  • 2 sprigs of spring onion
  • 1/2 tsp salt

    METHOD:

    • Heat a pan with the oil, sauté the garlic
    • Add Beyond mince & sauté until lightly browned
    • Add the Olive Tapenade & mix well
    • Boil the penne in a pot of water until al dente & drain
    • Now add the penne to the Beyond mince & toss well
    • Next add in the sliced sun-dried tomatoes & toss again
    • Add salt to taste
    • Garnish with chopped spring onions & serve hot!
