OLIVE & BEYOND MINCE PENNE

SERVING: 2 PREP TIME: 10min COOK TIME: 20min
INGREDIENTS:
- 120g penne
- 230g Beyond meat mince
- 2 tbsps SOS Tuscan Olive Tapenade
- 2 tbsp olive oil
- 2 garlic cloves
- 4 sun-dried tomatoes
- 2 sprigs of spring onion
- 1/2 tsp salt
METHOD:
- Heat a pan with the oil, sauté the garlic
- Add Beyond mince & sauté until lightly browned
- Add the Olive Tapenade & mix well
- Boil the penne in a pot of water until al dente & drain
- Now add the penne to the Beyond mince & toss well
- Next add in the sliced sun-dried tomatoes & toss again
- Add salt to taste
- Garnish with chopped spring onions & serve hot!
