OLIVE & BEYOND MINCE PENNE

INGREDIENTS:

  1. 120g penne
  2. 230g Beyond meat mince
  3. 2 tbsps SOS Tuscan Olive Tapenade
  4. 2 tbsp olive oil
  5. 2 garlic cloves
  6. 4 sun-dried tomatoes
  7. 2 sprigs of spring onion
  8. 1/2 tsp salt

METHOD:

  1. Heat a pan with the oil, sauté the garlic
  2. Add Beyond mince & sauté until lightly browned
  3. Add the Olive Tapenade & mix well
  4. Boil the penne in a pot of water until al dente & drain
  5. Now add the penne to the Beyond mince & toss well
  6. Next add in the sliced sun-dried tomatoes & toss again
  7. Add salt to taste
  8. Garnish with chopped spring onions & serve hot!
