MANGO RICE PAPER ROLLS

SERVING: 2                          PREP TIME: 5min                         BAKE TIME: 25min

INGREDIENTS:

  • 50g mung bean vermicelli
  • 1 tbsp SOS Wicked
  • Salt to taste
  • 1 tsp sesame oil
  • 1 tbsp white vinegar
  • 1/2 carrot
  • 1/4 green capsicum
  • 1/2 peeled cucumber
  • 6 Rice paper sheets
  • 1/2 a bowl of cilantro & mint

    DIPPING SAUCE:

    • 2 tbsp SOS Wicked
    • 2 tbsp lemon juice
    • Salt to taste

      METHOD:

      • Mix SOS Wicked, lemon juice, salt & refrigerate until ready to use
      • Boil mung bean vermicelli in a pot until soft
      • Drain vermicelli & add sesame oil, white vinegar & salt to taste
      • Thinly slice the carrot, green capsicum & cucumber
      • Loosen a rice paper sheet in water, add the sliced veggies & vermicelli
      • Drizzle SOS Wicked, sprinkle with mint & cilantro & roll up
      • Repeat the process to make 6 rolls
      • Serve with the Wicked dipping sauce
