HOT 'N' SOUR TOM YUM PENNE

SERVING: 2 PREP TIME: 10min COOK TIME: 10min
Ingredients:
- 150g penne
- 2 tbsps SOS Pat Pong
- 4 button mushrooms
- 2 long red chillies
- 3 broccoli florets
- 4 cherry tomatoes
- 2 tbsps olive oil
- 5 tbsps pasta cooking water
- 2 garlic clove
- 3/4 tbsp salt
- Dried Italian seasoning to garnish
- Cilantro to garnish
Method:
- Boil the penne in water until al dente. Drain & reserve some of the pasta water
- Half the button mushrooms, cherry tomatoes, the broccoli florets & grate the garlic cloves
- Heat the olive oil in a pan, add garlic & sauté for 1min
- Add SOS Pat Pong to the pan & continue sautéing for 2mins
- Add the veggies to the pan & continue cooking until veggies are half-cooked
- Add in the penne to the pan & mix well with the veggies
- Loosen the pasta with some of the reserved pasta water
- Season with salt, dried Italian seasoning & garnish with cilantro
