HARISSA CHICKEN TAGINE

SERVING: 2 PREP TIME: 5min COOK TIME: 10min
INGREDIENTS:
- 300g cubed chicken
- 2 cloves grated garlic
- 1/2 sliced red onion
- 1 tbsp SOS Harissa
- 1 tbsp tomato paste
- 1 tbsp extra-vrigin olive oil
- 1 tbsp butter
- 1 bowl couscous
- 1 tsp cinnamon
- 1/4 tsp turmeric
- 1/2 tsp salt
- 3/4 cup chicken stock
METHOD:
- Heat a pot, add olive oil, add grated garlic & stir-fry.
- Then add the sliced onion & stir-fry until the onions soften.
- Add the cubed chicken, turmeric, SOS Harissa, tomato paste, salt & cinnamon & stir-fry.
- Now add the chicken stock, cover the pot & allow the tagine to simmer.
- Cook the couscous as per the instructions on the box.
- To serve, lay the chicken tagine on a bed of couscous!
