HARISSA CHICKEN TAGINE ON COUSCOUS

INGREDIENTS:
  1. 300g cubed chicken
  2. 2 cloves grated garlic
  3. 1/2 sliced red onion
  4. 1 tbsp SOS Harissa
  5. 1 tbsp tomato paste
  6. 1 tbsp extra-vrigin olive oil
  7. 1 tbsp butter
  8. 1 bowl couscous
  9. 1 tsp cinnamon
  10. 1/4 tsp turmeric
  11. 1/2 tsp salt
  12. 3/4 cup chicken stock

METHOD:

  1. Heat a pot, add olive oil, add grated garlic & stir-fry.
  2. Then add the sliced onion & stir-fry until the onions soften.
  3. Add the cubed chicken, turmeric, SOS Harissa, tomato paste, salt & cinnamon & stir-fry.
  4. Now add the chicken stock, cover the pot & allow the tagine to simmer.
  5. Cook the couscous as per the instructions on the box.
  6. To serve, lay the chicken tagine on a bed of couscous!
