HARISSA CHICKEN TAGINE

SERVING: 2                         PREP TIME: 5min                         COOK TIME: 10min
INGREDIENTS:
  • 300g cubed chicken
  • 2 cloves grated garlic
  • 1/2 sliced red onion
  • 1 tbsp SOS Harissa
  • 1 tbsp tomato paste
  • 1 tbsp extra-vrigin olive oil
  • 1 tbsp butter
  • 1 bowl couscous
  • 1 tsp cinnamon
  • 1/4 tsp turmeric
  • 1/2 tsp salt
  • 3/4 cup chicken stock

    METHOD:

    • Heat a pot, add olive oil, add grated garlic & stir-fry.
    • Then add the sliced onion & stir-fry until the onions soften.
    • Add the cubed chicken, turmeric, SOS Harissa, tomato paste, salt & cinnamon & stir-fry.
    • Now add the chicken stock, cover the pot & allow the tagine to simmer.
    • Cook the couscous as per the instructions on the box.
    • To serve, lay the chicken tagine on a bed of couscous!
