FISH WITH WICKED SALSA
SERVING: 1 PREP TIME: 15 mins AIR-FRY TIME: 25 mins
INGREDIENTS:
- 1 boneless white fish fillet
- 3 tbsp SOS Mango lime chilli sauce
- 1/2 onion
- 1/2 tomato
- 1/2 cucumber
- 1/2 cup bottled jalapeños
- 1/4 cup coriander
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp italian seasoning
- 1/2 lemon
- 1/2 cup all purpose flour
- 1/2 cup Panko breadcrumbs
- 1 egg
METHOD:
- Season the flour with the salt and pepper
- Season the breadcrumbs with the italian seasoning
- Beat the egg
- Dip the fish in the egg, then coat it with the flour
- Dip the fish fillet again in the egg and then coat with the breadcrumbs
- Stick it in the airfryer at 180*C for 25 min or until done
- Meanwhile chop all the vegetables to make a salsa
- Add in the SOS mango lime chilli sauce and juice of the lemon
- Season with salt if needed and mix in with the vegetables
- Top the cooked fish fillet with the salsa
- Enjoy!
