THAI GREEN CURRY TOFU

SERVING: 4 PREP TIME: 10min COOK TIME: 10min
Ingredients:
- 400g firm tofu
- 2 tbsp olive oil
- 4 tbsp SOS Thai Green Curry Paste
- 5 florets of broccoli or cauliflower
- 5 baby corn
- 1/2 cup water
- 1 cup coconut milk
- 1 tsp lemon juice
- Salt to taste
METHOD:
- Stir fry the tofu cubes in the olive oil till golden brown. Keep aside
- Stir fry the SOS Thai green curry paste in the same pan
- Add in the tofu cubes, sliced baby corn, broccoli florets
- browned tofu, sliced baby corn, florets of broccoli, water & let simmer till vegetables are half done
- Add in the coconut milk & let simmer for 2 mins
- Add salt & lemon juice
- Serve with rice or on its own!
